Cambodian Fauna






The spider was about four inches across. This one was in the house I stayed in - they tried to get it out, but didn't succeed at that. There were quite a few of these in various locations.

Skinny chickens everywhere ... as well as wild dogs -- only a few well-to-do people have pet dogs.

A lot of lone cows here and there.

We saw a few monkeys once, but didn't get the camera out in time to capture that in candid and never saw anymore.

The see-through lizards were everywhere -- ok, mostly on ceilings and walls -- I kept trying to get a better shot.

Generally, not a lot of wildlife.

Back on Home Turf

Corbyn's back. We're glad to have him home again ... yup, we missed him while he was away. Faith Mattaya welcomed him back too -- at just 15 months, we weren't sure what her reaction would be ... would she have "forgotten" him? Or would she be shy? Nope, not at all, there was no hesitation to run and give him a big hug - even though she had just awoke from a nap. The pictures are a blur, it all happened so fast ... but the essence is there so I've posted them anyway.





Maybe I can convince him to write a post to let you in on a bit of what his trip was like ...

Signs of New Life

We see signs of new life popping up all around us these days:





This last weekend we remembered & celebrated Christ's crosswork. The new life that began through the death & resurrection of Jesus is the best of all.
I pray that those who see & know me will see the signs of new life that Jesus has given my soul. Thank you Jesus, for paying the price for my new life!

WW Chiffon Cake


This fabulous chiffon cake is made with only wholesome ingredients, including whole wheat flour ... and yet it still rose to the heights and retained its fluffy, moist texture until it was consumed -- and even in this household it lasted just over 24 hours. Well, it is a big cake!

Perhaps, I'll try little cakes sometime. You know they do have little tube pans now ... maybe someday.

Anyway, here's the recipe that Margaret shared with me a few years back (Thanks Marg!):

Chiffon Cake

1 1/2 c. ww. flour
3 tsp. baking powder
1/2 c. olive oil
3/4 c. cold water
10 egg whites
10 egg yolks
1/4 tsp cream of tartar
1 c. sugar (or xylitol for lower carbs)
1 tbsp. guar gum

In a smaller bowl mix sugar, baking powder, oil, egg yolks and cold water.

Beat egg whites until stiff. Add cream of tartar. Fold in egg mixture gently until blended.

Pour into ungreased tube pan. Bake in slow oven -- 325 for 55 minutes on lowest rack. Increase temp. to 350 degrees, continue baking for 10-15 minutes. Remove from oven, invert pan to cool.

Remove from pan. Slice & serve with whipped cream & cherry sauce (or other fruit of your choice.)

Prepare for Take Off


Corbyn, leaving for Cambodia with his Uncle Darryl who is going on a missions support trip with Children's Camps International. They will be gone from March 30 - April 15, 2010.

Corbyn left for Cambodia on March 30th @ 6:00 AM. He's getting there on April 1st -- 26 hours after leaving Winnipeg airport. He's flying over the date line and missing his birthday on March 31st.

What a memorable trip right from the get go!

The two of them are going to encourage the believers in Cambodia - distributing blankets & clothing as well as helping at various VBS camps numerous Churches are hosting.


This is just a short trip around the world ... are you prepared for THE flight? When Christ sounds the trumpet to call His loved ones home, will you meet Him in the air?

These 20 Years


It has been our joy to know & nurture this young man for these last twenty years. They've been good years together. We are so grateful to God for sharing him with us.

It was our privilege to celebrate his 20th birthday on Monday, March 29th though his actual birthdate isn't until the 31st. Read more here.

Special note: I was very thankful to finally find my missing recipe for chiffon cake (Thanks for the recipe, Margaret!) Can you believe this hightop cake was made with whole wheat flour? It was delicious with whipped cream & cherry sauce!
